Dr. Roxanne Kay Eubank, retired Professor Emeritus at St. Mary’s University of Minnesota, passed away on February 21, 2026, from complications of a long illness. Roxanne was born on October 2nd, 1957, in Quimby Iowa to William and Phyllis Eubank who predeceased her.
She graduated from high school in 1976 and attended Iowa State University. After graduation from Iowa State, Roxanne received her masters and Doctorate in education. Dr. Roxanne Eubank devoted 29 years of distinguished service to St. Mary's University of Minnesota, where she was widely recognized and deeply respected as a gifted professor, devoted dissertation advisor, and transformative mentor. As Director of the Institute for Lasallian Studies and a longtime faculty member in the Ed.D. in Leadership program, Dr. Eubank exemplified a true Lasallian educator and embodied the university’s commitment to whole-person education. Her classroom was a place of intellectual challenge and genuine care, where students were invited not only to think more deeply, but also to grow in confidence, purpose, and integrity.
She cared deeply for her students—not only academically, but also professionally and personally—remaining in touch with many long after graduation. She lifted countless students to higher levels of intellectual rigor and self-belief, guiding doctoral candidates through the demanding dissertation process with both high expectations and steady encouragement. Her mentorship shaped not only strong scholars, but thoughtful leaders committed to service.
Roxy is survived by her loving husband, Scott Harlan; her brother, Bill Eubank (Cheryl); her nieces, Tara (Jason) and Lindsey (Wyatt); and her nephew, Tyler (Trina). She is also survived by her sister-in-law, Cathy; her nieces, Stephanie (Mike) and Jessica (Harley); and many close family members and friends.
Roxy’s celebration of life will be Monday, March 16th from 5-7pm at Mancini's Char House 534 Seventh St. West St Paul MN https://mancinis.com/.
